If you have sat across a table from any of us this past year, you have heard some version of this conversation. It usually starts with a simple question: what does Verdánt actually do? Here is the short answer, written the way we would say it in person.
Verdánt Organics grows certified organic microgreens and oyster mushrooms indoors, year-round, in Minnesota. We are not a farm in the traditional sense. We are a team of operators, growers, and scientists who have spent our careers building and running complex growing operations, and who got tired of watching the food system settle for less than it could be.
The problem we are solving is one every serious chef and produce buyer already knows. The best organic produce is inconsistent. It shows up when the season allows, it lasts a few days at best, and it costs enough that it stays a garnish instead of an ingredient. And because it does not last, a staggering amount of it ends up in the trash. By most estimates, around 40 percent of the food grown in this country is thrown out, and fresh produce is the biggest offender. That waste happens in restaurant kitchens, in distribution centers, and in home refrigerators. Growers have long had to choose between quality, reliability, and price. Kitchens have learned to live with that choice, and with the waste that comes with it.
We do not think they should have to. We believe extraordinary organic produce should not be rare, seasonal, or out of reach. It should be consistent, accessible, and grown with integrity. That belief is the whole reason Verdánt exists, and it is why our mission is simple: to become the most trusted partner, reliably delivering the highest quality, affordable organic produce.
So we are building a different kind of growing operation: a precision-controlled indoor environment where mushrooms and microgreens are grown together, each one helping the other, using about 90 percent less water than conventional growing and no chemicals at all. The result is greens that are thicker, leafier, and more flavorful. Then we do something with them that nobody else is doing. Our packaging approach is unique to Verdánt, and it takes microgreens that normally last about seven days and keeps them fresh for 25 days or more. For a chef or a distributor, that is not an improvement. That is a different product. And because of how we grow, we can offer certified organic quality at prices much closer to conventional produce.
If you have heard any of us talk about Verdánt, you have probably heard the same five things, because we say them in every meeting. Consistent high quality. Consistent supply, available when you need it. Easy-to-use packaging, no washing needed. Game-changing shelf life, which matters enormously to chefs and distributors. And 100 percent organic and sustainable. That is the whole company in five lines.
Where we are today: our first facility is coming. Construction is planned to break ground in Minnesota later this year, with the first harvest to follow. Until then, we are doing the work that has to come first, and there is a lot of it. We would rather bring you along for that part than show up one day with a finished building and ask you to trust us.
This is what our online Grow Room is for. Over the next few months we will write about what microgreens actually are and why chefs keep asking for them, about oyster mushrooms, about why we grow indoors, and about the people who started this company and what pulled each of us in. If you want to follow along, sign up for our newsletter (one email a month, nothing more) or find us on LinkedIn, Facebook, and Instagram.
Something remarkable is growing. We are glad you are here for the beginning of it.
